I believe it's something to do with my server setup. I did just do a server migrations and went from CentOS 7 to AlmaLinux 8 64-bit. I suspect there's a setting in there that's causing the issue, but my knowledge of server setups is extremely limited.

What happens if you save an article with a long piece of "Lorem Ipsum" text?

Have you tried setting Debug System to Yes and Error Reporting to Maximum to get a stack trace to look at?

My guess is that you may have a mod_security rule that is marking your posted text as an attack.
